Few people know that Italians came to the Basque Country in the 1800's. They brought with them the tradition and techniques of fishing and apply them to produce the best limited production anchovies out there. Since then, San Filippo has selected very carefully the anchovies they process, making sure that every instruction is carefully followed. The result is a perfectly conserved fish in olive oil.
Because of the nature of this product and its artisan making process you will find it is not homogeneous. You may encounter different anchovies even in the same production lot. The main objective to Sanfilippo is to maintain the flavor and textures from the anchovies in the salting process.
