Harvested in its state of maximum maturity, the grapes are de-stemed with the maximum softness and as fast as possible, being careful not to extract any vegetal or oxidative notes. Pump-ups are very soft and the wine goes through short macerations. Subsequently the wine passes into barrels for approximately six months, seeking to soften tannins and stabilize the color.
