Sousa & Labourdette salt-cured goose Magret / Secreto de ganso ibérico de Sousa & Labourdette

Soussa & Labourdette make goose foie-gras without gavage at their farm in Extremadura.

The magret is obtained from their geese, a variety descending from the European wild goose “Anser anser“, raised in their fields without forced feeding them while they keep their winter migration instinct. 

La Patería de Sousa produce y elabora de forma totalmente ecológica todos sus productos garantizando la mayor responsabilidad social y bienestar del animal.

El Secreto es la pechuga de sus gansos curada a la sal, una carne roja de muy alta calidad. Como el jamón ibérico, presenta finas tiras de grasa intramusculares entre las vetas de carne debidas a la bellota y el modo de vida en libertad de nuestros gansos.
